Fuel your busy morning with this tasty, nutritious breakfast. Banana & Blueberry overnight oats. 1 cup oats 1 cup milk 1 cup yogurt (I prefer Greek) Half a cup of blueberries ... 1 small banana sliced 1 tsp vanilla essence Mix it all in a cereal bowl, cover and leave in the fridge overnight. Super easy lunch idea... Carrot & Ginger Soup 1 tbs oil 1 white onion chopped 8 medium carrots diced 3cm root of ginger grated... 1 pint of vegetable stock Salt & pepper 1 tbs Greek yogurt to serve Healthy, nutritious & tasty. Carrots are an excellent source of vitamin A and a good source of several B vitamins as well as vitamin K and potassium. Ginger is a superfood and loaded with nutrients. Among its many health benefits are it helps fights infections, flu & colds. Try it, it’s yummy
